A yummy dip for any occasion. And it’s low fat and high fiber.
Put cream cheese and shredded cheese in a glass microwavable mixing bowl. Microwave for about 30 seconds and then stir. You want the ingredients warm enough to blend well but not melted.
Then add the sour cream and microwave for a few more seconds until just warm and stir well. Add the black beans, olive brine and olives. Mix well and serve with crackers or chips.
This is a warm dip but can be enjoyed chilled especially if you want to spread it on crackers.
A little secret: if I want to increase the fiber, I add 1 tablespoon of flax meal and it still tastes great.
