White chocolate and cranberries, a flavor combination made in heaven, brought together to make the easiest no-bake granola bars!
Line an 8×8 pan with parchment paper and set aside.
Combine oatmeal, cranberries, white chocolate, salt, and collagen (if using) in a large bowl and set aside.
In a small saucepan on low heat, combine almond butter, honey, and coconut oil, stirring frequently until smooth and melted together. Pour almond butter mixture over oatmeal and stir until well combined.
Pour batter into parchment-lined pan and press down. Refrigerate overnight (you want to refrigerate overnight because this is a no-bake recipe and this will allow the oats to absorb the moisture and soften).
Cut into bars and enjoy! Store in fridge.
