Description

It’s a seafood fiesta!

Ingredients

  • FOR THE QUESADILLAS:
  • 2 Tablespoons Butter
  • 1 whole Red Pepper, Sliced
  • ½ whole Red Onion, Sliced
  • 1 cup Pineapple Chunks, If Desired
  • 2 whole Avocado (peeled, Pitted And Sliced)
  • 1 cup Monterey Jack Cheese, Shredded
  • Black Pepper To Taste
  • 8 ounces, weight Lump Crab Meat
  • 1 whole Lime
  • 8 Homemade Tortillas
  • FOR THE HOMEMADE TORTILLAS:
  • 4 cups Flour
  • 2 teaspoons Salt
  • ½ teaspoons Baking Powder
  • ½ cups Oil
  • 1-½ cup Boiling Milk

Preparation

In a large skillet melt 1 Tablespoon of butter over high heat. Add the red peppers and onions to the pan. Allow to sit and cook for 1 minute, do not stir. After 1 minute, toss to coat. Throw in pineapple, if using. Remove to a clean dish when everything is slightly blackened.

Wipe down skillet and allow to heat again. Melt a pat of butter, and place a tortilla on pan. Top with 1/4 cup of cheese, avocado slices, some crab meat and the pepper and pineapple mixture. Squeeze in some lime juice, and season with some pepper. Sprinkle on a bit more cheese. Top with second tortilla. Flip. Heat through. Repeat with the remaining tortillas and filling ingredients. Serve with limes and cool sour cream.

For the Homemade Tortillas:
Stir together the flour, salt and baking powder in a large mixing bowl. Mix in the oil, there will be lumps of oil. That’s ok!

Heat the milk in a microwavable bowl until boiling, about 2 minutes. Pour the hot milk into the mixing bowl and combine. Dough should be soft and pliable, not sticky. You may need to add more milk or flour to reach the desired consistency.

When dough has cooled, finish mixing with hands. Pinch off a piece of dough about the size of a small apple, roll out the dough with a rolling pin. Roll in one direction, flip and roll in the other direction. Repeat a few times. Dough does not need to be perfectly round.

Bake the tortilla on a DRY pan over medium low heat. NO OIL! When tortilla bubbles, flip over to other side for a few seconds. Repeat with remaining tortilla dough.

Tasty. We omitted the pineapple and added a heavy dose of Tabasco. It needs something else, so we will be playing around with the recipe to see if adding pintos or refried beans will make it perfect.
