These amazing Coconut Date Snack Bites will satisfy your sweet tooth and stop the rumble in your tummy with healthy, whole ingredients. You gotta make these!
Remove pits (if necessary) from dates, give them a rough chop and add to a food processor bowl along with almonds. Pulse about 8-10 times, or until dates and almonds are broken down to small pieces.
Add rolled oats, 1/3 cup coconut, honey, cinnamon and salt. Process until everything is well-combined.
Empty snack bite mixture onto a rimmed plate or baking sheet. By teaspoonfuls, roll into 1-inch balls. Roll bites into remaining 1/4 cup coconut and press to adhere.
