A healthy and easy to prepare snack. Use as a topping on a salad or as an after school snack.
Preheat oven to 225 F. Wash and remove stems from apples. With the apples laying on their side, slice them about 1/8 inch thick right through the core (remove seeds as you slice apples but no need to core them).
Arrange apple slices in a single layer on a cookie sheet sprayed with cooking spray. Lightly sprinkle apples with half of the cinnamon and sugar. Place cookie sheet in oven and cook for 1 1/2 hours. Remove pan from oven.
Flip apple slices and sprinkle with remaining cinnamon and sugar. Put pan back into the oven and continue to cook for 1 1/2 hours. Remove from oven and allow to cool.
Store in an airtight container. Enjoy as a snack or a topping on a salad.
