Description

A healthy chocolate and peanut butter granola bar.

Ingredients

  • ½ cups Peanut Butter
  • ⅓ cups Honey
  • ¼ cups Coconut Oil
  • 1-½ cup Old Fashioned Rolled Oats
  • 2 Tablespoons Wheat Germ
  • ½ cups Flax Meal
  • ¼ cups Marshmallow Bites
  • ¼ cups Mini Chocolate Chips

Preparation

Line an 8 inch baking dish with foil. Set aside.

In a small saucepan, heat peanut butter, honey, and coconut oil until melted. Stir frequently and remove from heat once it’s liquid.

In a bowl mix together oats, wheat germ, flax meal, and marshmallow bites. Pour melted peanut butter mixture over the oats, and stir well to combine. Dump mixture into the prepared baking dish. Using a spatula sprayed with non stick spray, press down gently to cover the bottom of the pan. Sprinkle chocolate chips over the top, and gently press into the bars. Let it set up in the fridge for at least 30 minutes before serving.

Store in an airtight container in the fridge.

They are tiny little marshmallows – like the ones that come in packets of hot chocolate. They sell them in a little canister in the baking asile. Pefectly fine to just leave them out!

My daughter adores these granola and she’s quite the picky sort. She ate the entire batch for lunches and never once got sick of them.
