Creamy chilled corn dip with red peppers and green chiles.
1. Drain corn and green chiles in a colander. Mix together in a large bowl.
2. Chop red peppers into corn size pieces.
3. Add peppers in with corn and chiles.
4. Stir in sour cream and mayo.
5. Add taco seasoning, mix until well combined. If you want a spicier dip, add in some paprika, chile powder, or a few splashes of Tabasco.
6. Set in fridge and let sit for at least 1 hour before serving.
7. Serve with tortilla or corn chips.
