Description

Chicken lettuce wraps filled with crunchy, juicy chicken and homemade tzatziki sauce. I love this for a snack or a light lunch.

Ingredients

  • FOR THE CHICKEN:
  • ¼ teaspoons Cumin
  • ½ teaspoons Paprika
  • 1 teaspoon Garlic Salt
  • ½ teaspoons Salt
  • 1 teaspoon Lemon Pepper Spice
  • 1 cup Dried Bread Crumbs
  • 1 whole Large Boneless, Skinless Chicken Breast, Sliced 1-inch Thick
  • Cooking Spray
  • 1 cup Sliced Vegetables Of Choice
  • FOR THE TZATZIKI:
  • 1-½ cup Greek Yogurt
  • 2 teaspoons Lemon Juice
  • ½ teaspoons Salt
  • 1 clove Small Garlic Clove, Minced
  • 2 whole Persian (or Mini) Cucumbers, Peeled And Small Diced

Preparation

For the chicken:
Set a metal cooling rack on top of a rimmed baking pan. Set aside.

In a dish that’s wide enough to coat the chicken, whisk the spices and breadcrumbs together. Taste it and adjust seasonings to your taste.

Roll each chicken piece individually in the breadcrumbs until coated. Set chicken on the cooling rack to rest and when you’ve coated all of them place pan in the refrigerator for a few minutes to allow the mixture to set onto the chicken.

For the tzatziki:
Stir all the ingredients into the yogurt. Refrigerate while the chicken is cooking.

Preheat oven to 375 F. Spray both sides of chicken strips lightly with cooking spray. Bake at 375 F for 7 minutes. Flip the pieces over and bake another 7 minutes until done.

Last step: wrap, eat and enjoy!
