Description

A great and easy wrap to make in advance and take with you to an outdoor picnic. Or as finger food for a party.

Ingredients

  • 8 whole Tortilla Wraps
  • 2 whole Smoked Chicken Breasts
  • 2 whole Avocados
  • 1 cup Mayonnaise
  • 1 cup Grated Parmesan Cheese
  • 8 slices Parma Ham
  • 1 bunch Spring Onions
  • 1 bag (about 6 Oz. Bag) Rocket Leaves

Preparation

1. Start by preparing all the ingredients. Slice the smoked chicken into thin slices. Then halve the avocado, take the stone out, peel them and also slice them into thin slices. Then take the spring onions and slice them as well.

2. I use plain mayonnaise, but to make it interesting, you can add some herbs to this as well (parsley, basil, dill, turmeric, paprika, etc). Actually, anything you like.

3. Warm the tortillas so they are easy to roll. Spread some mayonnaise on them and sprinkle with some of the cheese.

4. Add a strip of parma ham to the centre of the tortilla and then place some chicken slices and avocado slices on top of them.

5. Add some rocket leaves and spring onions (possibly top with some more mayonnaise, but I find that is not necessary).

6. Roll the tortillas. If you are not using them right away, roll them in aluminum foil and store in the fridge till they are ready to be served.

7. If you are using them as finger food, slice them on an angle and serve on a big plate.

8. You can make these wraps with all sorts of variations. Think about cream cheese with salmon and dill, or grilled vegetables with some parmesan cheese. The possibilities are endless. So have fun with your favorite ingredients!
