Description

I received this recipe from my mother-in-law 20 years ago. She doesn’t remember where it came from and I’ve never seen it in any cookbooks. Hope you enjoy as much as we do!

Ingredients

  • 16 ounces, weight Colby Jack Or Cheddar Cheese, Shredded
  • 2 whole Jalapeño Peppers, Seeds And Ribs Removed, Chopped
  • 1 cup Milk
  • 1 cup All-purpose Flour
  • 2 whole Eggs

Preparation

Preheat the oven to 350ºF. Spray a 9×13 baking dish with nonstick cooking spray and place cheese evenly in the bottom of the dish. Sprinkle the chopped jalapeños over the cheese, do not stir.

In a bowl whisk together the milk, flour and eggs. Drizzle over the cheese and jalapeño as evenly as possible, still not stirring.

Bake for 30 minutes. Cool for 10–15 minutes and cut into squares. Enjoy!

Update July 5, 2016: I made these for our family 4th of July potluck and used a jalapeño cheddar cheese that I bought at the local farmers market and sprinkled the top with some very very mild jalapeños. Everyone thought they tasted great that way! If you like it spicy be sure and try a spicier cheese!

I was really let down when I made this. It isn’t very flavorul. REALLY needed salt which is odd with the amount of cheese there is. I’m not going to make them again, but I would suggest adding salt and def. more jalapeno.

The bites with the jalapeno were really good, but the ones without were just ok. If you are going to make it I would recommend doing as much jalapeno as you can stand.

Thank you for sharing this sensational scrumpdiddlyisious recipe! I took it to a potluck yesterday — cut it into 1″ x 3″ bars so people wouldn’t be afraid to try the ‘hot stuff’ — I always leave in the seeds and ribs because I like it HOT, but they loved it, licked the platter clean and asked for the recipe! I’ll make this again within the week and leave in the hot parts for myself! I used Cabot’s Seriously Sharp White Cheddar Cheese and grated it myself. Out of this world !!!!!!! You deserve a great big hug!

Holy Cow! These are so good that they should be outlawed! I made a half batch in an 8×8 pan using pre-shredded Cabot Seriously Sharp cheddar cheese and a few slices of pickled jalapenos because I didn’t have fresh jalapenos. My family loved them and told me that from now on whenever I make chili, I need to make these to go with it. This is a ridiculously quick and easy recipe to throw together, especially is you are using pre-shredded cheese. I had everything mixed and in the pan before my oven was even preheated. I will definitely be making these again. Thanks for the great recipe!

I made this for a birthday party last night and served it as an appetizer. It was quick, easy and everyone LOVED it! I think next time I make it I will serve it with a side of sour cream an salsa. Thanks for a sharing a great recipe!
