Description

Tasty cauliflower bites with cheese, onions, almond and corn meal, and chia seeds!

Ingredients

  • ½ heads Cauliflower, Chopped
  • ½ cups Mozzarella Cheese
  • ½ cups Yellow Onions, Diced
  • ¼ cups Parsley, Chopped
  • 1 whole Large Egg
  • 1 whole Large Egg White
  • 3 Tablespoons Almond Meal
  • 2 Tablespoons Corn Meal
  • 2 Tablespoons Chia Seeds
  • 1 dash Salt And Pepper
  • Your Favorite Dried Herbs, To Taste (optional)

Preparation

1. Preheat oven to 400ºF. Grease 2 cookie sheets.
2. Fill a saucepan up with 2 to 3 inches of water and bring it to boil. Once the water is boiling, place the cauliflower florets in the saucepan. Cook for about 5 minutes. Drain the boiled water from the saucepan and run the cauliflower under cold water.
3. Put the cauliflower, cheese, onions, and parsley in a food processor and mix until everything is finely chopped.
4. Empty the cauliflower mixture into a bowl and stir in the egg and egg white.
5. Add the almond meal, corn meal, chia seeds, salt, pepper, and any dried herbs, and fold everything into the cauliflower mixture.
6. Scoop about 1 tablespoon of the mixture and place it on the cookie sheet. Flatten the mixture into small medallions.
7. Once all the mixture is placed on the cookie sheets, place the sheets into the oven.
8. Bake for about 16 to 20 minutes, flipping the medallions halfway through baking.
9. Remove the medallions from the oven when they are golden brown.

These were so easy to make! I did not have Almond Meal, but I was able to quickly chop almonds to a meal consistency. I used the convection feature on my oven as well. My only advise, be generous with the seasoning. My batch made 27 medallions and when I did the nutrition, it was 20 calories per piece.
