Where have these little darlings been all my life? All I can say is forget the chips!
Preheat oven to 400 F.
Rinse and drain the chickpeas. Pat them dry with paper towels and remove most of the skin from them (you can just gently pinch each one and the skin should easily slip off).
Place the chickpeas on a rimmed sheet pan and drizzle with the olive oil. Put pan into the oven. Roast them for 40 minutes.
Remove pan from oven. Put them in a serving bowl and sprinkle on the seasoning and salt. Serve immediately.
