Description

Looking for a yummy and simple veggie to go with dinner tonight? Well, look no further. This broccoli casserole is absolutely fabulous! It is requested at every family gathering I attend and my two-year-old even scarfs it down!!

Ingredients

  • 16 ounces, weight Chopped Broccoli
  • 1 can (10.75 Oz. Can) Cream Of Chicken Soup
  • 1 cup Mayonnaise
  • 2 whole Eggs
  • 1-½ cup Grated Sharp Cheddar Cheese
  • 1 package (one 4-oz Sleeve) Ritz Crackers

Preparation

Preheat oven to 350 degrees.

Cook broccoli, drain well. Combine all ingredients together (except Ritz crackers) and pour into a 9×13 casserole dish.

Crumble one sleeve of Ritz crackers on top. Bake for 25 minutes or until crackers are golden brown.

Note: if you are feeling particularly dangerous, try the Honey Butter Ritz Crackers. It gives a hint of a sweet taste to the casserole that is absolutely wonderful!

My family, including two picky toddlers LOVED this casserole. I didn’t have Cream of Chicken soup on hand so I threw in Cream of Mushroom instead, and it was GREAT.
