Description

Light appetizer that it gobbled up in seconds. Men L-O-V-E this appetizer. My mother in law got it from a magazine, so it’s not my own, but I’ve made it one of my signature ‘bring alongs’ to every party and it’s always devoured first. The great thing about these little red delights is that they won’t ruin your appetite!

Ingredients

  • 20 pieces Cherry Tomatoes
  • Salt
  • Pepper
  • 1 container Sour Cream
  • 2 ounces, weight Cooked Bacon
  • 1 bunch Italian Or Flat Leaf Parsley

Preparation

Cut tomatoes in half and scoop out the guts. There are handy little tomato gadgets that will make this really easy, but I have used a grapefruit spoon and a melon baller before and it worked fine. A good pairing knife and some finesse will also do the trick.

Dab inside of each tomato with a paper towel to dry it up inside then sprinkle each half with salt and pepper……don’t be shy.

Fill a Ziploc with sour cream and cut a corner to allow piping. Put a small dollop of sour cream inside each tomato. The only way these babies can go wrong is if you put too much sour cream inside each one. You’re looking for a small dollop that should only fill half the space you made. Then put a nice sized piece of bacon on top of the sour cream.

***HINT*** Buy the bacon at the salad bar area of your fancy grocery store. It will be already cooked and only cost you about .75 cents! If you don’t have a fancy grocery store, move to the city.

Then nestle a full leaf (or two) of the parsley next to the bacon.

These can be refrigerated up to 12 hours ahead of time and then served. Make a ton of them! Each person can eat 5-6 if not more!

No plates, no utensils required! That’s my kind of entertaining!

These tomatoes are a hit with the fellas! I added a piece of cut cucumber to each tomato first to give extra crunch, and sprinkled the top with red pepper flakes to satisfy the folks wanting a little kick. Great little appetizer!

I’ve been making something similar for years with a few adjustments. I mix finely chopped bacon, scallions and grated parm into my sour cream and then pipe it in. Tons of flavor and ALWAYS a hit. Also great to spread the sour cream, bacon, grated parm mixture onto a tortilla, add sliced tomato and leaf or butter lettuce, roll and cut into large pinwheels or small wraps. YUM!
