Description

A twist on an old favorite, to use over a number of foods such as fish or potatoes! Not as sweet as you think it might be.

Ingredients

  • 1-½ cup Blackberries, Chopped
  • 1 cup Onion, Finely Diced
  • ½ cups Jalapeno Or Red Serrano Hot Peppers, Finely Diced
  • ½ cups Sweet Pepper, Red, Orange, Or Yellow, Finely Diced
  • 1 stick Butter (not Margarine)
  • 1-½ Tablespoon Garlic, Minced
  • ¼ cups Strawberries, Not Too Ripe, Finely Diced (optional)
  • 1 whole Tomato, Small, Finely Diced (optional)
  • 8 teaspoons Lemon Juice
  • Salt

Preparation

Playing around with sweet fruit and hot peppers yesterday resulted in this amazing relish to eat over our broiled tilapia!

I used a food processor and pulsed the blackberries 3 times, carefully (don’t liquify). Chop onions, hot and sweet peppers (and the tomato and strawberries, if using).

In a large skillet, melt butter, then saute onions, garlic, hot peppers, and sweet peppers.

Add in blackberries and heat until simmering. If using, add in the strawberries and tomato. Simmer on medium for a few minutes. Stir in the lemon juice and salt liberally.

I had about half a cup of my spicy sweet pico de gallo left over (with tomatoes in it), so I tossed it in. That is why I said it is optional to add them in. It’s fine without them!
