Description

Bite-sized balls packed with banana pudding flavor, covered in dark chocolate and sprinkled with sea salt. These are the ultimate salty sweet snack!

Ingredients

  • ½ cups Creamy Peanut Butter
  • ⅓ cups Honey
  • ⅓ cups Coconut Oil
  • 1 box 3 Ounce Box, Banana Pudding Mix
  • 5-½ cups Rice Krispies (I Used Gluten Free)
  • 1 cup Old Fashioned Oats
  • 1-¼ cup Dark Chocolate Chips
  • 1 teaspoon Sea Salt

Preparation

Combine peanut butter, honey, and coconut oil in a large saucepan over medium heat until coconut oil is melted. Stir in the pudding mix and whisk until well incorporated. Turn off the burner and remove pan from heat. Add the cereal and oats and stir until mixture is coated evenly.

Shape mixture into bite-sized balls. You will need to squeeze the mixture tightly for the shape to hold. Set the balls aside on a sheet of wax paper.

Microwave chocolate chips in a small glass bowl for about 45 seconds at 50% power, continuing with additional 45 second bursts until chocolate is melted. Stir in between cooking times as needed.

Dip each ball into the melted chocolate, set on the wax paper and sprinkle with sea salt. Keep balls in an airtight container in the fridge.

Great Beverly! I think almond butter would be a great substitute for the peanut butter. I hope you give them a try!

I am adding these to my recipe box. We have peanut allergies, but most of the time you can leave out peanut butter and/or substitute another ingredient. I would like to play with this recipe.
