Description

Great appetizer for two!

Ingredients

  • 1 whole Large Sweet Potato (Not Yams) Washed, Peeled
  • ½ sticks Sweet Cream Butter, Melted
  • 1 teaspoon Cinnamon
  • 2 Tablespoons Light Brown Sugar
  • 2 pinches Ground Nutmeg
  • 1 cup Whole Marshmallows
  • Confectioners Sugar, For Dusting (optional)

Preparation

Preheat oven to 425ºF. You will need 2 wooden skewers (6-inch length), soaked in water 15 minutes before using, and an oval or small square oven safe dish to bake the stacks in. Spray dish well with cooking spray and set aside.

Thickly slice sweet potato (I cut about 1 inch off the ends first) into about 8 slices. In a small mixing bowl, add melted butter, cinnamon, brown sugar, and nutmeg. Stir with a whisk. Add sweet potato slices and fully coat with butter mixture.

To assemble stacks, lay one coated sweet potato slice flat. Top with one marshmallow, followed by another slice of sweet potato and another marshmallow. Finally, top with a third slice of sweet potato. Repeat with remaining ingredients. They can be 3 or 4 high.

Press a wooden skewer through the center of each stack and transfer to baking dish. Pour any leftover butter mixture onto the bottom of baking dish. Cover tightly with aluminum foil and place in the oven on the middle rack. Bake 20 minutes.

Remove from oven, plate and serve. Dust with confectioners sugar, if desired. Absolutely delicious!
