A lightened-up take on classic party food.
Preheat oven to 350ºF. Slice jalapeños in half and use a spoon to scoop out most of the seeds.
In a bowl, mix together the Neufchâtel cheese, 1/3 cup cheddar, chili powder, black pepper, and cayenne. Spoon mixture into each jalapeño half and arrange on a baking sheet lined with parchment paper or foil. Sprinkle remaining cheddar on top.
Bake in the oven for 30 minutes, or until cheese is bubbly and just beginning to brown.

Don’t forget to wear gloves when preparing the jalapenos. I learnt the hard way and my hands burned for 2 days.
