Description

This is one of my quickie cheater recipes that I whip up in a flash to bring as a potluck appetizer or to a brunch gathering. A culinary masterpiece, it is not, but I usually have all the ingredients on hand. I plan for four pieces per person.

Ingredients

  • 1 package Bacon, Diced
  • 1 whole Tomato, Diced
  • 1 whole Onion, Diced
  • 1 teaspoon Dried Basil
  • ½ teaspoons Garlic Powder
  • 3 ounces, weight Shredded Cheese (I Use Cheddar/jack Mix Or Sometimes Parmesan)
  • ½ cups Mayonnaise
  • 2 cans Buttermilk Biscuits, Flaky/Layered

Preparation

Preheat oven to 375 degrees.

Cook bacon until crispy, then drain fat/oil and let cool.

Mix tomato, onion, dried basil (this would be great with fresh basil, too), garlic powder, cheese, and mayonnaise. Mix with the cooled bacon.

Grease two mini muffin trays. Separate biscuit dough pieces into layers and place rounds in the bottom of the tin. I once made the mistake and didn’t get the layered biscuits, but I just separated the dough into halves/thirds and made my own flat rounds.

Add one spoonful of the bacon mixture to each cup, and bake for 10 to 15 minutes. Cool on wire rack so the bottom doesn’t get too soft.

These are so great! My family and friends actually request that I make these for bdays and holidays, I double them sometimes to be eaten as sides instead of appitizers.
