Description

10-minute make ahead avocado feta salsa is always a party hit.

Ingredients

  • ¼ cups Finely Chopped Red Onion
  • 1 clove Garlic, Peeled And Minced
  • 1 Tablespoon White Wine Vinegar
  • 1 pinch Kosher Or Sea Salt
  • ¼ teaspoons Fresh Ground Black Pepper
  • 2 whole Roma Tomatoes, Seeded And Finely Chopped
  • 1 Tablespoon Finely Chopped Fresh Parsley
  • ½ Tablespoons Dried Oregano
  • 1 Tablespoon Olive Oil
  • 1 whole Ripe Avocado, Chopped
  • ½ whole Lemon, Juiced
  • 4 ounces, weight Feta Cheese, Crumbled

Preparation

Combine onion, garlic, vinegar, a pinch of salt, and pepper to taste in a medium bowl. Let rest while you prepare remaining ingredients.

Add tomatoes, herbs, and olive oil and stir gently to combine. Fold in avocado, lemon juice, and feta and adjust seasoning as needed. Cover surface of salsa with plastic wrap and refrigerate for 2 hours, or up to a day, before serving.

Notes:
The recipe is vegetarian (if using vegetarian feta) and gluten-free. For gluten allergies, do not use pre-crumbled feta: most brands contain a powdery coating with gluten to keep the crumbles from sticking together. The block kind tastes much better, too!

Letting the salsa rest for 2 hours isn’t essential, but it really helps the feta soak up the other flavors in the dip, making it that much better.
