Combine flour, baking soda and salt in a small bowl.
With a hand mixer, combine 2 bananas and sugar. Beat until you have a banana creamy light mixture. Add butter and eggs and mix until creamy. Stir in vanilla.
Stir the dry mixture into the creamy mix and add the remaining bananas mashed but leaving them chunky. Add the nuts now if you like.
Pour mixture into 2 greased 8″ bread pans and bake at 350 degrees for one hour.
If you sprinkle a little brown sugar on the top of the bread as it bakes, the bread will look ‘fancy.’
The bread should be springy in middle, not soft. Let cool at least 15 minutes before slicing.

I tried this recipe today. It came out good, very moist. Mine cooked much faster than an hour though, others might want to keep a close watch on the time.I tried the brown sugar sprinkle on one of mine to see which I liked the best. The sugar just sort of sat there and didn’t really adhere to the loaf
even though I put it well before it was done. I probably wouldn’t do the brown sugar topping again.

This was my first attempt at banana bread. It was outstanding! My father-in-law, who is notoriously critical, was impressed! Please don’t tell him how simple it is.
