These savory muffins are great for lunch on the go. As a nanny, I made them with the kids and then packed them for school lunches. The filling can be altered to suit your kids.
Preheat the oven to 400 F.
Mix the flour, baking powder, salt and sugar in one bowl and the egg, milk and melted butter into another.
Carefully blend the liquids into the dry ingredients, making sure there are no lumps. Add more milk if the batter is dry.
Add the peppers, meat, onion and cheese, and mix well.
Pour the batter into 4 large muffin cups and bake for 15 – 20 minutes.
These freeze well. Get creative with the fillings and find your own favorites. Corn flour can be substituted.
