I came up with this dish one night when I was making rice, but didn’t want it to be the same old boring rice we always have. I wanted depth and flavour. This is my all-time favourite rice recipe now.
Place rice, broth and salt in a medium pot and bring to a boil; reduce heat and simmer 20 minutes, adding peas during last 5 minutes of cooking time.
Meanwhile, melt butter in a small sauce pan and let it turn deep brown in color. The is important for the flavor! Once the butter has browned, add the onions and saute until tender.
Check the rice to make sure the broth has all been absorbed; if not, continue cooking until it has been, probably no more than an additional 5 minutes. Once the rice is cooked and the broth is absorbed, pour the brown butter with onions over the top and stir to coat.
Note: You can also use white rice for this recipe. If you do not have chicken broth on hand, you can use water with chicken bouillon instead. If you use regular broth instead of low sodium, make sure you reduce the salt in the recipe to 1/2 teaspoon.
