This is my mother-in-law’s recipe. This is the best cobbler I have ever made! It has a homemade pie crust that is light and flaky. Great served warm with ice cream or cold!
For the crust:
Combine flour and salt. Cut shortening into flour and salt mixture until pea size. In another bowl, combine egg, water, and vinegar. Add small amount of liquid at a time to flour mixture. Continually fluff with a fork. Use only as much liquid as you need to dampen all flour. Mixture will still be slightly crumbly. Knead briefly with fingers to make it stick together. Form a ball and let stand for 5 minutes.
Divide dough in half and roll out on wax paper or pastry cloth to 1/8 inch thickness (may take a little more than half for the bottom crust.)
For the cobbler assembly:
Place crust into a 9×13 baking dish. Fill in any holes or cracks.
Fill crust with peeled and sliced apples. Mix sugar and cinnamon together and sprinkle over the apples. Put slices of butter on top of the apples/sugar. Mix water and cornstarch together and pour over top of apples/sugar.
Roll out the other half of the crust and place on top. Seal top and bottom crust together. Tuck the edges down into the baking dish. If you like you can sprinkle top with additional cinnamon and sugar.
Bake at 350F for 45-55 minutes.
