Moist and good for you zucchini bread. Keeps the kids coming back for more! Use up all that zucchini in your garden with these healthy as possible muffins or bread!
Preheat oven to 325 degrees F ( 165 degrees C). Grease and flour your pans.
In a large bowl, beat eggs until light and frothy. Mix in oil, applesauce and sugars. Stir in zucchini and vanilla.
In separate bowl combine flour, cinnamon, soda, baking powder, salt and nuts; stir into the egg mixture. Divide batter into prepared pans or muffin cups.
You can half this recipe with great results!
Bake for 60 to 70 minutes, or until done or 20 min on muffins.

They just came out of the oven and WOW…awesome!! I made a dozen mini loaves and 2 dozen mini muffins. I just ate half a mini loaf myself, the kids are going to love this in the morning. I did not put nuts in it because I plan to give them away but I do not think they need them at all. So excited to finally find a kick a$$ zucchini bread recipe.

I halved this recipe and everything turned out great!
Delicious and moist! I made about 18 muffins and one loaf.
I will definitely make this again – using the whole recipe next time!

I love this recipe! My husband’s aunt makes this every summer and everyone loves it! This recipe is also equally good with chopped pecans!
