I got this recipe when I was cooking at a summer camp in college. They were a great way to get a little extra nutrition into the kids in a delicious, moist muffin.
Preheat oven to 400º. Spray muffin pans with non-stick spray.
Combine liquid ingredients in a small bowl.
Mix dry ingredients in a large bowl, then stir in liquids until blended. Fold in fresh blueberries.
Scoop batter into prepared pans, sprinkle tops with cinnamon sugar. Bake for 25-30 minutes or until done. Turn muffins out onto rack. Serve warm.
