Description

A friend shared this recipe for an easy cornbread that is a little on the sweet side. It goes great with a bowl of chili or my Spicy Sausage Cheese Chowder.

Ingredients

  • 1-½ cup Yellow Cornmeal
  • 1-½ cup Flour
  • 1 cup Milk
  • ¾ cups Sugar
  • ½ cups Oil
  • 2 whole Eggs, Beaten
  • 1 Tablespoon Baking Powder
  • ⅛ teaspoons Salt

Preparation

Mix all ingredients just until moist.

Bake in a greased 9″ square pan at 400º for 30 minutes or until toothpick comes out clean.

Easy one bowl recipe. Checked at 20 min and 25 min. Definitely cook for the whole 30. It will be more brown than expected on the outside but perfect inside!

I just made this tonight (and ate a square as a late night snack) – it was quick, easy, and pretty moist. A big plus since a lot of cornbread recipes crumble once out of the pan. I used soymilk and subbed in 1/2 c. whole wheat flour and it came out just fine.

This was easy, traditional, and perfect. Finally cornbread that didn’t fall to pieces when I took it out of the pan.
