Description

Lime Squares – the best ever!

Ingredients

  • 2 cups All-purpose Flour
  • 1-½ cup Powdered Sugar
  • 1 cup Butter
  • 2 cups Sugar
  • 4 Tablespoons All-purpose Flour
  • 4 whole Eggs
  • 6 Tablespoons Lime Juice
  • 1 teaspoon Lime Zest (optional)
  • ¼ cups Powdered Sugar For Garnish
  • 1 whole Lime, Sliced, For Garnish (optional)

Preparation

For crust:
Mix flour and powdered sugar together and cut in butter with forks until butter is in about peasize pieces. Pat into 9″x13″ baking pan. Bake at 350 degrees F for 20 minutes.

For filling:
Mix sugar and flour together, add eggs, lime juice and zest and beat together until well mixed. Pour over crust and continue to bake for 25-30 minutes. Remove from oven and sprinkle with powdered sugar. Cool completely and cut into squares. Garnish with lime slices if desired.

* My mother-in-law’s recipe says it freezes well; however, mine have never made it into the freezer. We seem to devour them immediately!

We really loved these. Great flavor. I would like a little higher lime filling to crust ratio so next time I’m going to increase the lime filling ingredients by 50%.

I made these for a picnic and I was worried that they would get squishy and messy but they were not! They were firm but had a jelly like lime topping. It was so good.

The only thing I would add is to remember to zest the limes before you juice them. I forgot and zesting a cut lime is not easy.

Great recipe! Not as tart as lemon bars. Great summer flavor.
