Nice and tart and delicious! I don’t see too many recipes with plums these days… and our plum tree just started giving nice ripe plums, I had to do something with them!
Make your dough and put it in your pie pan/dish (or use a pre-made crust).
Wash and pit your plums. I was working with small plums and it took about four (4) plums per cup, so depending on your plum size, the amount will vary.
After the pit is removed, slice your plums, about 1/8 of an inch is as big as you want to go.
Mix together plums, flour, sugar, salt, cinnamon, and lemon juice.
Pour mixture onto pie dough.
Make the topping, by combining all of the topping ingredients.
Sprinkle over the top of the plum mixture.
Bake at 400º for 40 minutes, or until the plums are bubbling with syrup.
If you would like, top with whipped cream, when serving.
My pie was super tart (just the way I like it). If you prefer a sweeter pie, use a sweeter plum.
