I had a bunch of overripe bananas and this was the perfect way to use them! I ended up using a bit more mashed banana than the recipe calls for on my second loaf, but it didn’t seem to change anything. The bread turned out perfectly moist and somehow had an airy quality to it while being a nice dense, banana bread. I didn’t have any coconut on hand, but next time I’ll be sure to add it in!

SO yummy!! I had three over-ripped bananas and did not know what to do with them so I came to TK in search of a recipe. The coconut in this recipe caught my eye and I decided to give your recipe a try. I’m so glad I did! Hubby, Toddler and myself gobbled up an entire loaf in a matter of three days, thankfully we still have a loaf left for this weekend (I split the batter in to two bread pans). Thanks a bunch!

We made these last night, well we made muffins. They only took about 25 minutes to bake and they were delicious. I will definitely make them again, thanks!
