Description

Luscious blueberry muffins loaded with fresh picked blueberries and a crunchy sweet topping!

Ingredients

  • 4 whole Eggs
  • 1 cup Oil (I Use Coconut)
  • 1-½ cup White Sugar
  • 1-½ cup Brown Sugar
  • 1 teaspoon Vanilla
  • 2 Tablespoons Lemon Juice
  • 4 cups Flour
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1 cup Blueberry Yogurt
  • 1 cup Sour Cream
  • 4 cups Fresh Blueberries

  • FOR THE TOPPING:
  • ½ cups Melted Butter
  • ½ cups Brown Sugar
  • 1 teaspoon Lemon Zest
  • ⅓ cups Flour

Preparation

1. Preheat oven to 400 degrees F. Grease 24 muffin cups or line with paper liners.

2. In a large bowl, beat the eggs and oil while slowly adding the white sugar and brown sugar.

3. Stir in vanilla and lemon juice. In a different bowl, combine the flour, salt, and baking soda. Mix well.

4. Fold the yogurt and sour cream into the egg mixture.

5. Add the flour mixture a cup at a time until it is all incorporated. Do not over mix, the batter will be slightly lumpy.

6. Add the blueberries carefully. Do not crush the berries.

7. Fill the muffin cups all the way to the top.

8. In a small bowl, combine the topping ingredients.

9. Sprinkle the mixture over the tops of the muffins and bake for 20 -25 minutes.

I have to admit, the name made me curious enough to try these out! SO GLAD I DID! I was too lazy to make the topping, and they were still amazing! My entire family wolfed these down and made me promise to make this a “keeper”!

These were awesome! I substituted vanilla yogurt for the blueberry yogurt because because it was all I had and I had to add some extra flour and brown sugar to make the topping crumbly. I also added some oats to the topping mixture just for kicks. These were so moist and delicious!

These were great! My son wanted to eat 4 a day, ok he did he 4 a day. I wanted you to know I had to add about a 1/2 cup extra flour and 1/4 cup brown sugar to the topping to make it more of a crumbly topping. Thanks for the great recipe!
