This recipe is for the filling. For the crust, please visit my TastyKitchen recipe box and see my recipe for “Perfect Pie Crust”. This is a fantastic pie with a crispy crust, banana flavored cream filling, freshed whipped cream and banana slices on top!
Prepare pie crust; let cool.
To make filling: In a food processor combine sugar, flour, salt, 1 cup milk, egg yolks and banana flavoring. Process all ingredients until sugar has dissolved. Pour banana cream mixture into a medium sized sauce pan. Add remaining 1 cup of milk to mixture. Heat cream over medium-high heat, letting mixture boil for one minute. Remove from heat and stir in butter and vanilla. Pour into cooled pie shell. Refrigerate 2 hours.
To serve: Cut a piece of pie and top with whipped cream and banana slices.

i don’t like taking a chance with the bananas browning, that is why i opted to slice them, fresh, when ready to serve. to compensate for leaving the bananas out of the custard, i added banana flavoring.

Adding banana slices underneath the hot cream filling will impart a deep banana flavor into the custard. YUMMY

This was great! I altered it a bit by skipping the banana flavoring (didn’t have any) and putting banana slices on the pie crust, under the cream filling. It was so amazing! Really great recipe.
