Description

Edamame and peas create a fresh and green bruschetta, perfect for summer.

Ingredients

  • ½ Tablespoons Salt
  • 1 cup Frozen (shelled) Edamame
  • ½ cups Frozen Peas
  • 1 clove Garlic
  • 2 whole Spring Onions, Ends Removed And Chopped
  • ¼ cups Packed Basil Leaves
  • ¼ cups Olive Oil
  • ¼ cups Parmesan Cheese
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 loaf French Bread, Sliced On A Diagonal

Preparation

Bring a medium pot of water to a boil. Add about a 1/2 tablespoon of salt and the edamame, cook for 4 minutes, then add the peas and cook for another minute. In the meantime, prepare a large bowl of fresh ice water to be used to cool down the edamame and peas when they complete cooking.

Remove the edamame and peas from the boiling water and quickly move them to the prepared ice bath to cool and stop cooking. Once cooled, drain and set aside.

In a food processor, add the garlic and spring onions then pulse a few times. Next, add the basil leaves, cooled edamame and peas, then pulse 3-4 times or until the mixture is chopped up within the food processor. Stream the olive oil slowly into the mixture, while processing until everything comes together; it should look like a thick pesto. Remove the mixture and place into a bowl, then mix in the cheese, a pinch of salt and freshly ground pepper.

Use a griddle or oven to grill/toast slices of French baguette, then smear about a tablespoon onto each slice and serve.

I made this for company last month and I can’t stop talking about it. It was so easy to make but even better to eat!! My meat-loving husband even liked it. I’m definitely keeping this as a staple when I need an appetizer. You can’t go wrong with this recipe.

I live in timbuktu with no diversity, and I have found it in our stores. Walmart and Costco. I think I have even seen it at our Alberstsons.

This looks awesome! I can’t wait to make it.

@kitchenlovenest–I can always find edamame at WalMart and our local grocery stores. My area does have a pretty diverse ethnic background, but I think edamame have become mainstream enough to wind up just about everybody’s frozen veggie aisle.

@kitchenlovenest – we actually find our frozen shelled edamame at Trader Joe’s, I am not 100% sure about other stores though. The recipe will also work well with fresh edamame, you just have to cook them a tad bit longer.

This may be a silly question, but can you buy frozen shelled edamame at a “regular” grocery store, or do you need to go to an Asian grocery store?
This looks delicious, and I can’t wait to make it. Love the bright, bright green.

Delicious! Nice fresh tasting bruschetta or nice as a dip for veggies! Easy to make too.
