I received this recipe from my best friend, and it is delicious! It isn’t quite as light and fluffy as my Banana Chocolate Chip Muffins, but it holds up really well when packed around in lunches!
1. Preheat your oven to 350 F and grease a 9 x 5 x 3 inch loaf pan.
2. Sift together the flour, sugar, baking powder, baking soda and salt.
3. In a second bowl, mix together the egg, milk, vegetable oil, and mashed banana.
4. If you wish, add the chocolate chips to the wet ingredient mixture.
5. Add the wet ingredients to the dry, and beat for about half a minute to combine. The batter will be lumpy, but this is good!
6. Bake at 350F for 65 – 70 minutes.
Note: I think my oven runs hot, because mine was done at 55 minutes, and I probably could have taken it out after 50 minutes. My best friend cooks hers for the full 65 minutes and it comes out perfect at that time every time. So start checking it at around 45 minutes, just in case.

This is a wonderful banana loaf. I probably added a tad more banana than called for because I had half of a banana left after measuring the 1 1/2 cups so I just tossed it in. It is moist with great flavor. I added the chocolate chips and they were good, but next time I think I will try it without them
