A tasty way to start the day! These muffins have a tender crumb and a touch of maple flavor. For variety I have substituted 1 cup of crumbled, cooked breakfast sausage for the pecans.
Preheat oven to 375 degrees (F).
Spray muffin cups with nonstick cooking spray.
In a small bowl combine flour, baking powder, baking soda, salt and pecans.
In a large bowl use a mixer or wooden spoon to beat the softened butter until smooth. Stir in the maple syrup, then add the sour cream and egg.
Add the dry ingredients and stir just until combined. Do not overmix!
Scoop batter into prepared muffin cups. Bake for 15-18 minutes.
