A refreshing drink that makes any day that much better.
1. Add the strawberries and mint to a glass pitcher and muddle with a wooden spoon.
2. In a large pot, add 1/3 cups to 1/2 cups of sugar or to taste, and 2/3 cup of water. Cook over medium heat until the sugar dissolves. Pour over the strawberries.
3. Stir in the lemon juice and fill the pitcher with the remaining water. Chill or pour over ice and serve. I garnish the pitcher with a few halved strawberries and a few thin slices of lemon.
