These bran muffins are very light and fluffy. This recipe makes quite a few, so I like to put some in the freezer to have on hand for easy, breakfasts on the go! My husband likes to cut them in half, spread with butter and toasted along with a glass of milk. Hope you enjoy!
Mix buttermilk with bran and let it soak.
Mix together brown sugar, white sugar, eggs and oil. Add baking soda, salt, vanilla and raisins. Mix flour with baking powder and set aside. Mix bran mixture with liquid mixture and quickly mix in flour. Lightly grease muffin tins or use paper liners. Spoon batter into prepared tins 3/4 full.
Bake in 350 degrees oven for 25 minutes or until nicely brown and toothpick comes out clean when poked into muffin. Let muffins rest for 10 minutes before removing from pans. Remove from pans and cool on cooling rack. Enjoy!
