Easy, quick and healthy. A breakfast the whole family can love and you can feel good about serving.
1. Preheat oven to 400F and prepare a muffin pan with liners or by greasing the pan.
2. Combine dry ingredients in a medium-sized bowl.
3. Add wet ingredients and mix until combined.
4. Spoon into muffin pan.
5. Sprinkle tops of muffins with a little sugar and the lemon zest if you are using that.
6. Bake for 15-20 minutes or until golden brown.
