This pie can be made ahead of time and on the fly. It needs only a couple of hours to set. It is always a crowd-pleaser.
Let ice cream soften enough that you can push a wooden spoon down in the carton.
Pour the ice cream into a mixing bowl and add the peanut butter. Mix well until the peanut butter is completely blended into the ice cream.
Pour into the graham cracker crust and smooth out with a spoonula. Refreeze uncovered for 2 hrs or longer.
-if leaving overnight, wrap in plastic once the pie is frozen.
– you can use a chocolate crumb crust and/or chocolate ice cream as well.
-you can also add in things like m&ms, choc chips, etc… but really it’s delicious by itself.
