Description

Moist peach muffins, great for breakfast or as a snack!

Ingredients

  • 1-½ cup Whole Wheat Flour
  • ½ cups Quick Cooking Oats
  • ⅔ cups Turbinado Sugar
  • 1-½ teaspoon Baking Powder
  • 1 whole Egg, Lightly Beaten
  • ½ cups Peach Or Vanilla Yogurt
  • ¼ cups Butter, Melted
  • ¼ cups Oil
  • 1 teaspoon Vanilla Extract
  • 1 cup Fresh Peaches, Peeled And Chopped OR Well-drained Canned Peaches, Chopped

Preparation

In a large bowl, combine flour, oats, sugar and baking powder. Combine egg, yogurt, butter, oil, and vanilla; mix well. Stir into dry ingredients just until moistened. Fold in peaches. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400°F for 15-20 minutes, or until muffins test done. Cool in the pan 10 minutes before removing to a wire rack.

Makes 12 muffins. Calories per muffin: 196.

These sound yummy and I have a bunch of peaches that the fruit market was practically giving away this week, and I need to do something with them! I’ll just have to try to modify this recipe to be Gluten Free for my oldest kiddo. :-)

These muffins were fantastic! I made a few modifications…I used applesauce instead of the oil and I added about 1/4 teaspoon of salt and maybe a teaspoon of milk.
I made these yesterday and they were gone by the end of the day. My husband couldn’t stop eating them.
I want to try them with blueberries too. Even apples with a bit of cinnamon would be yummy in the fall!

I’ve been going nuts over our wonderfully ripe Arkansas peaches lately, so I saw this recipe this morning and had to give it a go! Love that it uses whole wheat flour, and I, too, subbed in some applesauce. Only subbed applesauce for the oil–left the butter in there. I added just a teensy bit of milk at the author’s suggestion (think it helped!). The sweetness of the fresh peaches carried the muffins for sure–yum! Think I’ll add a dash of cinnamon to the dry ingredient next time. A winner!

I substituted brown sugar, canned peaches and applesauce for the butter and oil. Delicious!
