This is a go-to recipe in our house. It is a definite crowd pleaser. Pretend it’s healthy, and eat up!
Preheat oven to 350.
Melt butter and add to corn muffin mix.
Stir in corn, creamed corn, and sour cream.
Add slightly beaten eggs. Stir until mixed.
Bake in an 8×8 pan for 35 min.
You can easily double this recipe to make in a 9×13 and increase the baking time to 50 min.

I tweeked it a bit w/ for my sweet tooth:
+ 1/2 of condensed milk
+ 1 egg instead of 2

Love this recipe I make it all the time, for barbecues and Thanksgiving every year. FYI I usually make it with only one egg, tastes just fine to me. I also decided to throw in some cheese and jalapenos once and it was pretty tasty that way too.
