Description

These yummy chocolately muffins have an interesting undertone of texture with the added pear. Very light and fluffy. If you are an extreme chocolate lover you can add chocolate chips for an extra kick. Enjoy!

Ingredients

  • 3 Tablespoons Butter
  • 4 cubes Semi-sweet Bakers Chocolate
  • 2 whole Eggs
  • ⅔ cups Whole Milk
  • 2 teaspoons Cinnamon
  • 2 teaspoons Vanilla Extract
  • ½ cups Sugar
  • 6 ounces, weight Yogurt ( Banana Cream Pie Flavor)
  • 2 cups Flour
  • ½ teaspoons Salt
  • 1 teaspoon Baking Soda
  • 1 whole Pear, Grated

Preparation

Preheat oven to 400 degrees.

Prepare 2 muffin pans by either spraying with cooking spray or lining with paper liners. I spray the inside of the liners so they don’t stick to the muffin when you peel it back. Your family will kiss you for this.

Melt butter and chocolate pieces in pan, stirring until smooth and melted. Set aside for a few minutes to cool.

In a separate bowl combine eggs, milk, cinnamon, vanilla, sugar and yogurt. Mix until well combined.

Add flour, baking soda, salt, and grated pear. Mix until well combined.

Drop batter into muffin pan filling each cup about 1/2 way full.

Bake at 400 degrees for about 15 minutes or until knife inserted in center comes out clean.

Yummy! For more chocolatey goodness add 1 cup of mini chocolate chips.
