Description

I will admit, I saw Ree’s muffin recipe with this glaze. I wanted the glaze, but didn’t have the ingredients for the muffins, so I made my own muffins. You will make these over and over and over and…you get it. They literally melt in your mouth.

Ingredients

  • FOR THE MUFFINS:
  • 1-½ cup All-purpose Flour
  • ½ teaspoons Baking Soda
  • ½ teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1 stick Softened Butter (I Used Regular, Salted)
  • ⅔ cups Granulated Sugar
  • 2 whole Eggs
  • ½ cups Orange Juice
  • 1 teaspoon Vanilla Extract
  • ½ cups Fat Free Banana Yogurt
  • _____
  • FOR THE GLAZE:
  • ½ cups Orange Juice
  • 1 cup Brown Sugar

Preparation

Preheat oven 350 degree.

Stir together dry ingredients

For the wet ingredients:

I did all of this by hand, and I feel like that is what made them so light and fluffy. So, whisk the soft butter with the sugar until fluffy. Add 1 egg at a time, mixing well after each addition. Add vanilla, yogurt and 1/2 cup orange juice. Mix until combined (no more white crumbles). Put in muffin cups WITHOUT liners! I made the mistake of using them and they blocked my glaze. Bake at 350 degrees for about 12-15 minutes until they are set, but not browned.

When they are out of the oven, mix together the brown sugar and remaining orange juice and then, pour over those warm, amazing cupcakes/muffins.

I made this for a function I had to to attention this weekend. They were wonderful!!! Soooo moist! Love the flavor too! The iceing was great! Thanks for posting this one! Yum!!!!!! A new favorite at our house! Will be making these again sooon! =)
