Simple and impossibly creamy coconut ice cream made with only three ingredients.
Scald the coconut milk, heavy cream, and sugar until the sugar is dissolved. Let cool completely. Pour into an ice cream maker and process according to manufacturer’s instructions. Note that cook time for this recipe is the time it takes the machine to freeze the ice cream base.
Makes about 2 pints.

This is delicious. I toasted about 1 cup of coconut in a dry saute pan and added that when the ice cream was almost done. Fabulous. I especially love this recipe because coconut ice cream is not exactly readily available for purchase at the grocery store.

I love my little Cuisinart ice cream maker. Does it in a jiffy and makes just enough for dessert for the family. No leftovers.
I’ll make some of this to serve with grilled pineapple.
