Description

YUM! Who knew banana and butterscotch made such a good couple?

Ingredients

  • 2 cups All-purpose Flour
  • ⅓ cups Brown Sugar (or Use White)
  • 3 teaspoons Baking Powder
  • 1 teaspoon Salt
  • ½ cups Butterscotch Chips
  • 3 whole Very Ripe Bananas
  • 1 whole Egg
  • ¼ cups Milk (may Need A Little More)
  • ¼ cups Vegetable Oil

Preparation

Preheat oven to 400F

Measure first 5 ingredients into a mixing bowl and stir to mix. Make a well in the center.

Mash bananas with a fork. Don’t worry if they’re still a bit lumpy. Beat an egg into the bananas, then add milk and oil and stir to mix.

Pour banana mixture into dry ingredients and stir gently until just moistened. DO NOT OVER MIX!! Batter will be lumpy.

Spray muffin tins with cooking spray. Fill cups 3/4 full. Bake for 18-20 minutes at 400F. Remove muffins to cooling rack immediately.
