Description

Moist and tender streusel-topped muffins with a hint of banana.

Ingredients

  • FOR THE MUFFIN BATTER:
  • ¼ cups Butter
  • 1 cup Brown Sugar
  • ¼ teaspoons Salt
  • 1 whole Ripe, Mashed, Banana
  • 2 whole Eggs
  • 1 Tablespoon Vanilla
  • 2 teaspoons Baking Powder
  • ⅓ cups Sour Cream
  • 1-½ cup Flour
  • _____
  • FOR THE STREUSEL:
  • ¼ cups Butter
  • ½ cups Brown Sugar
  • ½ cups Sugar
  • ¼ teaspoons Salt
  • ¾ cups Flour

Preparation

Mix together the muffin batter ingredients, folding in the flour last. Scoop into prepared muffin tins.

Make streusel topping with the streusel ingredients and evenly distribute the topping over the muffin batter.

Bake in a 350F oven for 18-25 minutes.

I was looking for something to do with an old banana and these were perfect. Went well in the lunch boxes.

Had a baby brain moment and did not follow directions – dumped everything for batter into the mixer bowl turned on, looked awful but you know what? Still turned out some of the moistest, sweetest muffins I’ve ever made. My husband was over the mood for them, as well. A great recipe, thanks!

These were a big hit with my kids. They came out just as advertised…moist and tender. I added a little cinnamon to the streusel and really liked it with the banana flavor.
I’ll definitely make them again…thanks for the great recipe!
