I can’t take credit for this recipe, because it was one of my teachers who made this for class and it was AMAZING! I had a slice for breakfast, but it would be a good snack or dessert.
Preheat oven to 350 degrees. Butter and flour (or use cooking spray) two 9 x 5 loaf pans.
Slice strawberries and place in a bowl. Sprinkle lightly with sugar (it helps bring out the sweetness).
Combine flour, sugar, cinnamon, salt, and baking soda in a large bowl. Mix well. Blend oil and eggs into the strawberries (strawberries will become small chunks).
Add the strawberry mixture to the flour mixture, stirring well. Stir in the pecans. Divide batter into the two loaf pans.
Bake for 45-50 minutes, or until a toothpick inserted comes out clean. Let cool on wire racks for 10 minutes. Turn loaves out and cool completely.
For the frosting:
Beat cream cheese with an electric mixer until soft, about 30 seconds. Add confectioners’ sugar, milk, and vanilla. Beat on low speed, about 30 seconds. Stir well and continue to beat until fluffy, about 2 minutes.
Spread onto loaves.

Excellent recipe! It was easy to make, and definitely a crowd pleaser. I loved the bright pink color that the batter made. The recipe will be a seasonal favorite in my house from now on. Thanks for sharing!
