Quick and easy salad dressing.
1. Add oil to vinegar and mix.
2. Add in jam and whisk until it forms an emulsion.
3. Taste and adjust ingredients as required. If it’s too sweet, add more vinegar; too oily, add more jam, etc.
That’s it. As far as I know, any kind of jam will work. I usually use the “double the fruit” store-bought kind.

I made raspberry vinegar last year with the seeds leftover from making jam. This is definitely going on my to-make list!

Yum! I’m going to try with my homemade raspberry jam, and possibly add some poppy seeds.
