This versatile sauce can be put to a variety of different uses. Served alone, it makes an amazingly flavorful dipping oil alongside bread. It also can be tossed with pasta, used as a marinade or salad dressing or as a pesto-like base for pizza.
1) Add cilantro, green onion, parsley and salt to food processor. Pack down.
2) Cover about 3/4 of the way with with olive oil (about 1 cup). Top off with about 1/8 cup of vinegar, give or take to taste.
3) Puree into a liquid.
4) Refrigerate for 30 minutes.
5) Serve chilled with warm bread!
