Creamy chocolate mousse.
Melt chocolate chips over a double boiler on medium heat. Set aside.
Place heavy cream, vanilla, and half of the sugar in a large mixing bowl and whip until thick. You may choose to use a wire whisk or an electric mixer. Keep chilled.
Whip egg whites with the remaining sugar until stiff and glossy.
Fold the chocolate mixture with the egg whites and whipped cream in a large bowl. Do not over mix.
Divide the mousse into four serving dishes and chill for 30 minutes or more.
